Katharine Hepburn's Brownies
Melt in medium saucepan on low heat:
2 1-oz. squares unsweetened chocolate
1 stick butter
Stir in:
2 lightly beaten eggs
1 cup granulated sugar
1/2 tsp. vanilla
Blend completely. Then, quickly stir in:
1/4 cup flour
Pour mix into a greased square baking pan.
Bake at 325 degrees for approximately 20 minutes. If not done, give it five more minutes, check again, and repeat as necessary. Different pans require different times.

Lemon Squares
2 cups flour
1/2 cup powdered sugar
2 sticks butter
2 cups sugar
1 tablespoon flour
1 teaspoon baking powder
1/4 teaspoon salt
4 eggs, well-beaten
4 teaspoons grated lemon rind
4 tablespoons lemon juice
Sift flour and powdered sugar together. Cut in butter until well blended. Spread and press down mixture on bottom of a 9- by 13-inch pan. Bake about 25 minutes at 300 degrees F. until brown. Combine remaining ingredients and spread on top of baked crust. Bake at 350 degrees for 25 to 30 minutes. Sprinkle with powdered sugar.
Yield: 12 servings.

Maple Walnut Bars
1 Egg -- beaten
1/2 cup Sugar
1/3 cup Butter (or marg.) -- melted
1/2 cup Flour -- self-rising
1 teaspoon Maple flavoring
1 cup Walnuts -- coarsely broken
1/2 cup Raisins
Combine egg and sugar, beating well. Add remaining ingredients; mix well.
Spread evenly in a greased 8" square baking pan. Bake at 350 degrees for 30
minutes.
Cool in pan; cut into bars or squares.

Nutty Raisin Bars
1 c brown sugar
1/3 c shortening
2 C raisins
2 c flour
1 t baking powder
1/4 t cloves
11/4 c water
1 t salt
2 t cinnamon
1/2 t nutmeg
1 c chopped nuts
Preheat oven at 350 degrees F.
Combine brown sugar, water, shortening and raisins in a saucepan;
bring to a boil and let it boil for about 3 minutes. Cool.
Sift dry ingredients into cooled raisin mixture. Stir until well blended.
Add chopped nuts, mixing to distribute them evenly.
Grease and flour a 9" square pan; spread mixture evenly and bake for 50 minutes.
Cool and cut into bars. Store in a tightly covered container.
You can also frost the bars if you like but there's no need.

Oreo Brownies Recipe
1/2 cup Unsalted butter -- softened
1 1/4 cups Sugar
3 large Eggs
5 ounces Unsweetened chocolate -- melted
2 teaspoons Pure vanilla extract
1/2 cup All-purpose flour
12 Oreo cookies -- coarsely chopped
1. Heat oven to 325 degrees. Line a 9- or 10-inch square baking pan with aluminum foil and lightly oil the foil.
2. Beat butter and sugar in large bowl of electric mixer until light and fluffy, about 2 minutes.
Add eggs, one at a time, mixing well after each addition.
Mix in melted chocolate and vanilla.
Add flour and mix in on low speed.
With a rubber spatula, fold in cookies.
3. Transfer batter to prepared pan; spread into an even layer with a rubb spatula.
Bake until a toothpick inserted in the center comes out clean, 40 45 minutes.
Cool on wire rack before cutting into squares.

Peanut Butter Crispy Bars

1/2 cup sugar
1/2 cup light corn syrup
2 T. margarine
3/4 cup peanut butter
4 cups crispy rice cereal
Optional: 1 cup (8 oz.) chocolate chips or favorite frosting
Combine sugar, corn syrup, and margarine in a large microwave-safe
bowl. Microwave on high until the mixture begins to boil (about 1 to
2 minutes). Stir in peanut butter. Stir in cereal until evenly coated.
While warm, spread the mixture into a greased 9 x 13 pan. If desired,
melt a cup of chocolate chips and spread over top of bars or spread
with your favorite frosting. When cooled, cut into bars and enjoy!

Rainbow Squares
1 cup margarine or butter
3 tbsp. sugar
2 cups flour
Mix. Press into 8 x 11 baking pan. Brown slightly.
Filling:
20 oz. can crushed pineapple
Small jar of maraschino cherries drained and cut in quarters.
1/2 cup sugar
3 tbsp. cornstarch
1 tsp. vanilla
Cook filling till thick. Spread on hot layer. Cool well. Ice with dream whip or beat 3 egg whites with ¼ cup sugar and bake as meringue.

Raspberry Jam Squares
Bottom:
1 cup flour
l tbsp. milk
1 egg
1/2 tsp. salt
1 tsp. baking powder
1/2 cup butter
Mix these ingredients like a pie dough and roll to cover 9 x 12 pan.
Spread RASPBERRY JAM to cover.
Topping:
1 cup white sugar
1/4 cup butter melted
1 tsp. vanilla
1 1/2 cups coconut
1 egg beaten
Mix ingredients well and spread over jam.
Bake in 350EF oven for 25 minutes. Cut in squares while warm.

Reese's Peanut Butter Bars
1 1/2 c Graham Crackers; crushed
1 lb Powdered sugar
1 1/2 c Extra Chunky peanut butter
1 c Butter; melted
12 oz Chocolate chips
In bowl, mix 1 1/2 cups graham crackers, crushed, with 1 lb. box powdered
sugar. Add 1 1/2 cups extra chunky peanut butter and add 2 sticks melted
butter. Mix well. Pat into a 9 x 13 buttered pan. Melt 12 oz bag chocolate
chips -- spread on top. Put in fridge for 10-15 mins, then cut into small
squares. Return to fridge until firm.

Rice Krispies Squares recipe
1/4 cup margarine or butter
25 marshmallows (or 3 cups mini)
1 teaspoon vanilla
5 cup rice krispies
Melt margarine in a medium heavy saucepan. Add marshmallows and
cook over low heat until melted.
Remove from heat, stir in vanilla and Krispies. Moisten spoon
with water and press mixture into greased 9" square pan.
Let set 30 min, cut in 24 pieces.

Salted Nut Squares
3 cups Salted peanuts without skins
3 tablespoons Butter
2 cups Peanutbutter chips
14 ounces Sweetened condensed milk
2 cups Minature marshmallows
Place half of the peanuts in an ungreased 11x7x2-inch baking pan; set aside.
In a saucepan, melt butter and peanut butter chips over low heat.
Add milk and marshmallows; cook and stir until melted. Pour over peanuts.
Sprinkle the remaining peanuts on top. Cover and refrigerate. Cut into bars.

Snickers Bar Brownies
1 German Chocolate Cake Mix
3/4 cup butter; melted
2/3 c Sweetened condensed milk
2 normal sized Snickers bar, sliced
Mix cake mix with melted margarine and condensed milk,
Spread out 1/2 of the mixture into a 9x13" pan. Bake
at 350~ for 10 minutes. Slice candy bars into little
slices. Lay these on top of the baked crust. With the
remainingcrumbly texture. No need to spread it on top
to make it smooth. Put it back into the oven and bake
it at 350~ for 20 minutes.

Sour Cream Apple Squares
2 cups flour, all-purpose
2 cups brown sugar, packed
1/2 cup margarine or butter
1 cup nuts -- chopped
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 cup sour cream
1 teaspoon vanilla extract
1 egg
2 Cups apples -- peeled,cored,chopped
Blend flour, sugar and margarine until crumbly. Stir in nuts. Press 2-3/4 c.
crumb mixture into ungreased 9 x 13 pan. To remaining mixture, add remaining
ingredients. Stir in apples. Spoon over base. Bake 25 - 30 minutes. Cut
into squares. Serve with whipped cream.

Surprise Cherry Squares
1 c Butter or margarine;
-softened
1 1/2 c Sugar
4 Eggs; beaten
2 c Flour, all-purpose
1 ts Vanilla extract
1 ts Lemon extract
1 cn Cherry pie filling; 21 oz
Cream butter; gradually add sugar, beating until light and fluffy. Add
eggs, one at a time, beating well after each addition. Gradually add flour,
beating well. Stir in flavorings. Pour the batter into a lightly greased
15x10x1-inch jellyroll pan, spreading evenly. Lightly cut through batter
with a small knife to mark off 24 squares. Spoon about 1 tablespoon pie
filling in center of each square. Bake at 350~ for 45 minutes or until
lightly browned. Batter will puff up around filling while baking. Cool cake
in pan 10 minutes. Cut into squares, and remove from pan.

Texas Brownies
2 cups all purpose flour
2 cups sugar
1/2 cup (1 stick) butter
1/2 cup shortening
1 cup strong brewed coffee
1/4 cup dark, unsweetened cocoa
1/2 cup buttermilk (if you don't have buttermilk, add 2 tsp. vinegar
or lemon juice to 1/2 cup milk)
2 eggs
1 tsp. baking soda
1 tsp. vanilla
Frosting:
1/2 cup (1 stick) butter
2 Tbsp. dark cocoa
1/4 cup milk
3 1/2 cups unsifted confectioner's sugar
1 tsp. vanilla
In a large mixing bowl, combine flour and sugar.
In heavy saucepan, combine butter, shortening, coffee and cocoa.
Stir and heat to boiling. Pour boiling mixture over flour mixture. Add buttermilk, eggs,
baking soda and vanilla. Mix well.
Pour into a well buttered 17 1/2" by 11" jelly roll pan. Bake 400 F. for 20 minutes or until they test done in the center.
While brownies bake, mix the frosting. In a saucepan, combine
butter, cocoa and milk. Heat to boiling while stirring. Add
confectioner's sugar and vanilla until frosting is smooth. Pour warm
frosting over brownies as soon as you take them from the oven.
Cool. Makes 48 bars.
