Thankfully, the answers to both questions is now Yes! Sadly, this bread is still only available in the UK, but when I was over in England visiting I was literally astonished by how delicious this bread tasted. I was sure I was going to get sick, because surely THIS bread wasn't really gluten free? It has a fluffy, light texture that one usually asociates with gluten bread. I wrote to the company and they assure me that eventually they'd love to break into the North American market, so hopefully we'll be able to enjoy Genius gluten free bread over here one day, too.

So, if we can't get Genius, we can still find some really delicious gluten free bread choices. I really like the Kinnickinick brand of products, and their fiber bread is my favorite choice for whipping up batches of delicious, authentic tasting French toast. (So simple to make - a few eggs, a bit of cream, I add a splash of vanilla - make sure it's gluten free of course - and then dip in the bread and cook in melted butter over medium heat in a fry pan or skillet.) Often, gluten free bread comes frozen to ensure it has a long life. But, check too with local bakeries - there are more and more gluten free bakeries popping up that provide fresh gluten free bread that is just delicious. Call your local baker and see if they have recommendations of specialty gluten free bakeries for you to contact.

You can simplify the process of making your own gluten free bread by trying tried and true gluten free bread recipes. Search online for 'gluten free bread recipes' and then choose those that are rated according to what the experiences of the readers were.
