"Christina, I wonder if you or any of the readers can help me. Most recipes that I want to try have garlic as an ingredient. However, I cook for my mom and she cannot eat anything with garlic in it, it makes her sick. Is there a good substitute for the garlic flavor I can use in recipes? Anyone have any good ideas I can try? I really would appreciate the help."

"Hi from Florida,
I wonder if you can help my dilemma. I have a precious little Maltese dog, 15.5 years old, that has developed a severe body odor. Using a shampoo weekly with oatmeal, aloe, etc. that was recommended by Petsmart (also expensive!) and he is ok for maybe a day. Then the odor is back. I have tried rinsing him in aloe, baking soda, people shampoo and conditioner, and even antibacterial spray and colonge. Nothing seems to help. Any ideas?"

USING BAKING SODA TO REMOVE BURNT FOOD
Sonia writes:
"Baking soda is very effective in removing burnt on foods. I prefer to heat a pan of water with a good splash of soda (1/4 to 1/3 cup) and let cool. I have used this to reclaim several cast iron skillets, griddles and a large pot. Caked on gunk wiped of the next day. When the soda had pulled off as much as it could, I would then use vinagar which would then react with anything left because the soda had 'combined' with the remaining residue."

Tip for Sugarless Pumpkin Desserts
After a reader requested a lower-sugar pumpkin dessert last week, one reader wrote this:
"My husband is a diabetic and loves pumpkin pie. I called Libby's and asked them if I can use Splenda instead of sugar and they told me it was OK. Turned out great. FYI ... Splenda is a great substitute for diabetics or anyone trying to lose weight."

Savory Pumpkin Nut Bake
Thanks to Cindy for this sugar-free pumpkin dessert
12 large eggs -- beaten
2 cups canned pumpkin
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/2 teaspoon salt
8 ounces mascarpone cheese -- lightly whipped*
1/2 cup Atkins Sugar Free Pancake Syrup
1/4 cup pecans -- chopped
1. In a mixer on high speed, whip eggs five minutes until thick.
2. Heat oven to 350. In a large bowl, whisk pumpkin until smooth;
gradually whisk in eggs, nutmeg, allspice, salt, mascarpone, and
syrup. Pour mixture
into a buttered 9-inch x 13-inch baking pan. Bake 45 minutes.
3. Sprinkle chopped pecans evenly over top; bake 15 minutes more.
Cool slightly before cutting.
* or 4 ounces softened cream cheese mixed with 1/2 cup cream.

"I found the following recipe for your reader. As for the "whip cream", she can buy the already made up (Cool Whip) at the store or make her own."
INGREDIENTS: 1/4 cup butter, 1 1/2 ounces unsweetened chocolate, 1 1/2 cups sugar, 1 tbsp. flour, pinch of salt, 1/2 cup milk, 2 eggs, 1 tsp. vanilla extract, 1 unbaked 9" pastry shell.
DIRECTIONS: Melt butter with chocolate. In a mixing bowl, combine chocolate and butter mixture with sugar, flour, salt, milk, eggs and vanilla. Beat with electric mixer for 5 to 6 minutes. Pour filling into prepared pastry shell and bake at 350° for 35 to 45 minutes until set.

Mini Cherry Pound Cakes

2 (16 oz) jars of maraschino cherries
1 1/4 cups butter, softened
2 3/4 cups sugar
5 eggs
1 tsp. vanilla
3 cups flour
1 tsp. baking powder
1/4 tsp. salt
1 (14 oz) can sweetened condensed milk
confectioners sugar
Drain cherries, cut into quarters. You should have about 2 cups.
Drain again on paper towels. Set aside. Put butter, sugar, eggs and vanilla in mixing bowl. Beat with mixer until mixture is well blended on low speed. Then on high speed additional 5 minutes until light and fluffy. Combine flour, baking powder and salt.
Add to batter mixture alternating with condensed milk to cream the mixture. Mix lightly after each addition. Add in cherries.
Stir well and pour into greased and floured mini loaf pans.
Bake at 350 degrees F for 45-50 minutes or until toothpick inserted into center comes out clean. Let cool in pans for 5 minutes then invert onto wire racks to cool completely. Wrap for gifts or dust with confectioners sugar and serve.

Healthy Tex-Mex Pizzas

Tex-Mex Turkey Pizzas

Preparation Time : 10 minutes
Cooking Time : 15 minutes
Makes : 4 servings
1 tsp. 5 mL Becel Oil
3/4 cups 175 mL salsa (medium or mild)
1 1 sweet red pepper, seeded and cut into 1/2-inch (1.25
cm) pieces
1 1/2 cups 375 mL cooked turkey, diced
4 4 green onions, thinly sliced
1 1 jalapeño pepper, seeded and minced (optional)
1/2 tsp. 2 mL garlic powder
1 1/2 cups 375 mL fat-reduced mozzarella cheese, shredded
1/2 cups 125 mL fresh coriander, coarsely chopped
4 4 whole wheat tortilla (6-inch)
1. Brush each side of tortilla lightly with oil. Bake in a preheated
400º F (200º C) oven for 5 minutes.
2. Remove tortillas from oven and spread evenly with salsa. Top with
red peppers, cooked turkey, green onions, jalapeños (if using),
garlic powder, and fresh coriander. Sprinkle mozzarella cheese
evenly over tortillas to cover other ingredients.
3. Bake in oven 10 minutes or until cheese has melted. Cut into
wedges and serve hot.
