REMOVING URINE ODOR

"Pam might want to try using OxiClean. It works really well on baby clothes and cat
urine, so I hope it helps!"
Another reader wrote:
"We have an 11 year old boy who still wets the bed
sometimes. What has worked well over the years is a
product we purchased at Sam's Club called Odoban. It
comes in a gallon jug concentrate that can then be used
to make spray bottles of it. We only just recently
purchased our 2nd jug in about 6 years. It is around
$10 for the jug. It also works well in the bathroom
when the three men/boys in our house miss the mark!
We also use it in/on our porta potty in our popup
camper and in the basement to eliminate the mustiness.
It works on hard surfaces and fabric/carpet."
EVAPORATED MILK TIPS
Mari says:
" Thanks for all you do with this kitchen crafts
and happy slob newsletters! Now, regarding the
milk problem. I buy soy milk in cartons so I
don't waste any. But before I started buying
soy milk, I would buy gallon jugs and freeze it
in about 1 cup portions. I never had any go to
waste this way and I always had it for recipes. "
Mary-Lynne says:
"In response to your reader who said she cut out milk
in her diet because they were gaining weight. My
question, as a dietitian is, why not use skim/1% milk
and drink only 2 - 8 oz glasses a day as recommended
for an adult. That provides 160/200 kcal and no fat/minimal
fat for the 1%. If she is adding evaporated skim to food
preparation, the added amount is minimal per serving
unless she is doing a lot of baking, in which case I
question if that is where they are getting the excess
calories to cause weight gain. I often recommend to
my patients on a low fat diet, to use evaporated skim
milk in sauces, soups and gravies. That way they are
avoiding the excess calories from fat. My advice is to
see a registered dietitian before cutting out important
food groups in your diet."

NO BAKE CHEESECAKE (SPLENDA RECIPE)

cheesecake made with ground walnuts for the crust. It is sweetend with
Splenda and has no flour or sugar."
SWEET POTATO PANCAKES

sweet potato pancakes, but can't find a recipe
she likes. Maybe one of your readers could help
me out with a good and simple recipe for sweet
potato pancakes. Sure would appreciate it."

SOFT FLAT BREAD

1/2 oz active compressed yeast
1/4 cup butter or margarine
2 1/2 cups milk
1/2 teaspoon salt
1/4 cup sugar
2 tabelspoon light corn syrup
1/2 cup graham flour (full-measure)
3/4 cup rye flour
2 3/4 cups all-purpose flour, plus additional flour for baking
Crumble yeast in a mixing bowl. Melt butter. Add milk
and warm until lukewarm 99°F. Dissolve the yeast in a
little of the milk mixture. Add the rest of the liquid,
salt, sugar, syrup, graham flour, and rye flour to the
yeast mixture. work in the flour. Cover and let rise for
about 45 minutes. Turn out onto a floured surface. Divide
the dough, which shouldn`t be to stiff, into 14 round balls.
Roll out very thin (1/2 cm or 1/8" thick), preferably using
a rippled rolling pin. Wrap the thin dough around the
rolling pin and bruch away any extra flour. Carefully
place the bread on the stove in a heated frying pan. Fry
about 2 minutes on each side over medium heat. Place on a
cooling rack, cover, and allow to cool.

Austrian Mocha Expresso

1/2 cup of instant coffee
2-1/2 cups nonfat dry milk
1/2 cup of sugar
1/4 cup cocoa powder
Mix well and store in a labeled container.
To serve, add two teaspoons or more to taste to
a cup of steaming hot water. This blend is so
delicious and smooth that people linger over it
for hours. It's especially relaxing and refreshing,
and so satisfying.

Low Fat Spicy Baked Catfish

1 pound catfish filets
2 tablespoons light mayonnaise
1 teaspoon lemon juice
1/2 teaspoon prepared mustard
1/2 teaspoon sugar
1/4 teaspoon Worcestershire sauce
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 teaspoon cayenne
paprika to taste
Serves 4
Preheat oven to 500°F. Rinse catfish and pat dry.
In a small dish, combine remaining ingredients, except
paprika, mixing well. Lay catfish in oblong baking
dish coated with cooking spray. Spread mayonnaise
mixture over fillets. Marinate for 30 minutes.
Sprinkle with paprika.
Bake for 10-15 minutes or until fish flakes easily with a fork.
Per Serving:
145 calories; 65 mg cholesterol; 6.0 g fat; 37.3 % of calories from fat

100% Fruit Smoothie
1 cup 100% fruit juice (pick your favorite), chilled
1/2 cup frozen strawberries
1 cup pineapple chunks
1 apple, cored, peeled, and chopped
1 banana, peeled and sliced
1 to 3 teaspoons ground flax seed, optional.
Place all in blender and blend just until smooth. Pour into 2 glasses and serve.

CREAMY ITALIAN WHITE BEAN SOUP
Prep Time: 20 minutes
Cook Time: 30 minutes
Ready In: 50 minutes
INGREDIENTS: 1 tbsp. vegetable oil
1 onion chopped
1 stalk celery chopped
1 clove garlic minced
2 (16 ounce) cans white kidney beans rinsed and drained
1 (14 ounce) can chicken broth
1/4 tsp. ground black pepper
1/8 tsp. dried thyme
2 cups water
1 bunch fresh spinach rinsed and thinly sliced
1 tbsp. lemon juice
DIRECTIONS: 1. In a large saucepan, heat oil.
Cook onion and celery in oil for 5 to 8 minutes
or until tender. Add garlic and cook for 30 seconds,
continually stirring. Stir in beans, chicken broth,
pepper, thyme and 2 cups water. Bring to a boil.
Reduce heat then simmer for 15 minutes. 2. With
slotted spoon, remove 2 cups of the bean and vegetable
mixture from soup and set aside. 3. In a blender on
LOW speed, blend remaining soup in small batches until
smooth (it helps to remove the center piece of the blender
lid to allow steam to escape). Once blended, pour soup
back into stock pot and stir in reserved beans.
4. Bring to a boil occasionally stirring. Stir in
spinach and cook 1 minute or until spinach is wilted.
Stir in lemon juice and remove from heat and serve
with fresh grated Parmesan cheese on top if desired.
MAKES: 4 servings.
