"Hi Christina—I love your newsletter and try new recipes from it often. I’m looking for a copycat recipe for a Jamaican Cowboy Margarita that I really enjoyed at Texas Roadhouse. I believe it had Malibu rum, pineapple juice and maybe orange juice in it, as well as the usual margarita ingredients. It was so refreshing and I’d like to make it at home. "

Fruit Cocktail Cake

This was a recent request - Jeannie sent in these two great recipes!

Fruit Cocktail Upside Down Cake

INGREDIENTS:
2 tablespoons butter
1/4 cup light brown sugar
1 cup fruit cocktail, drained
1 cup sifted cake flour
1 teaspoon baking powder
1/4 teaspoon salt
4 eggs, separated
1 cup granulated sugar
1/4 cup cold water
1 teaspoon vanilla

PREPARATION:
Melt butter in a 9-inch square baking pan. Sprinkle brown sugar over the butter. Spoon fruit cocktail over the brown sugar.

Sift together the flour, baking powder, and salt. In a bowl, beat egg whites until stiff peaks form.

Add the egg yolks and beat. Gradually beat in the granulated sugar. Fold dry ingredients into the egg mixture. Stir in the cold water and vanilla; blend well then pour over fruit. Bake at 325° for 50 to 60 minutes. Cool in pan for 10 minutes, then turn upside-down onto a serving plate.


Fruit Cocktail Cake 2

1 cup of flour
1 cup of sugar
1/4 teaspoon of salt
1 teaspoon of soda
1 egg
2 1/2 cans fruit cocktail, well drained

Sift together flour, sugar, salt and soda. Beat 1 egg and mix with 2 1/2 cans of fruit cocktail. Mix the egg mixture and flour together and put into greased and floured 8 x 8 inch pan. Mix 1/2 cup brown sugar and 1/2 cup chopped nuts and spread on top. Bake at 300ºF. for 1 hour.

Easy Hand Cream

4 tablespoons beeswax
4 tablespoons cocoa butter
4 tablespoons almond oil
Essential oil of choice

Melt beeswax and cocoa butter together. Add almond oil and essential oils of choice. Mix until completely smooth (by hand or with blender). Pour into a jar or small pot and let harden. Embellish as desired and give as a gift.

Homemade Coleslaw Dressing

Thanks to Debbie for this recipe

Dressing for slaw: Mix together: 1 T. sugar
1 1/2 tsp. salt
1 1/2 tsp. celery seed
1/2 c. vinegar
6 T. oil
mustard (if desired)

Bring to a boil. Meanwhile add 1 c. sugar to 1 large head of shredded cabbage, large onion chopped, 1 green pepper chopped. Pour dressing over cabbage, mix and chill. It is better if left over night to blend. ENJOY!!!!!!!!!

Breakfast Casserole Recipe

Thanks to Shannon for this breakfast/brunch favorite recipe

You can also make this vegetarian style. Just skip the meats. It's delicious either way!

12 ounces mild bulk sausage
12 ounces hot bulk sausage
10 eggs, lightly beaten
1 cup sour cream
1 large onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 zucchini, chopped
16 ounces mushrooms, sliced
2 cups cubed American cheese

Preheat the oven to 350 degrees F. Cook sausage. Drain grease and set aside to cool slightly. In a large, deep baking dish, add sausage, eggs, sour cream, onion, peppers, zucchini, mushrooms, and cheese and stir to mix. Bake for 30 minutes or until golden color.
