UNCOOKED QUAKER MULTIGRAIN CEREAL
Roberta asks:
"I wanted to try the recipe for homemade energy bars submitted by Treva
that I found in your newsletter but I can't find uncooked quaker
multi-grain cereal. I looked for it on internet too and it said
something like only in certain areas and distributed in limited
quantities, so I was wondering if I could substitute something or if
someone knows where I can find this cereal. Thanks in advance for your help."

INGREDIENTS: Leftover mashed potatoes (enough to feed 4 people)
6 strips of bacon
1/2 Cup finely chopped onions
1/2 Cup finely chopped celery
1 Tsp. ground sage
1/2 Tsp. ground white pepper
1 pound Brussels sprouts thinly sliced
Juice of a lemon
DIRECTIONS: Fry bacon until crisp then drain on paper towels leaving half
the fat in the skillet and reserving remaining fat. Add onions to
skillet and saute until soft (3 to 5 minutes). Add celery, sage and pepper
and saute 2 more minutes. Add Brussels sprouts and saute 5 more
minutes. Add lemon juice and then combine vegetables with mashed potatoes.
Refrigerate for 2 hours. Shape potato mixture into 10 patties. Heat
reserved fat in clean skillet. Add patties to skillet and cook until brown
and crispy, about 5 minutes per side. Crumble bacon on top and serve
immediately.

Snickerdoodles by Betty Crocker

1 1/2 cups sugar
1/2 cup butter or margarine, softened
1/2 cup shortening
2 eggs
2 3/4 cups Gold Medal® all-purpose flour
2 teaspoon cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sugar
2 teaspoons ground cinnamon
1. Heat oven to 400ºF.
2. Mix 1 1/2 cups sugar, the butter, shortening and
eggs in large bowl. Stir in flour, cream of tartar,
baking soda and salt.
3. Shape dough into 1 1/4-inch balls. Mix 1/4 cup
sugar and the cinnamon. Roll balls in cinnamon-sugar
mixture. Place 2 inches apart on ungreased cookie
sheet.
4. Bake 8 to 10 minutes or until set. Remove from
cookie sheet to wire rack.
Prep time 10 minutes Start to Finish 20 minutes
Makes 4 Dozen cookies

HOMEMADE LOTION FORMULA WITH VASELINE

15 oz baby lotion ( like Baby Magic or any pink baby lotion)
15 oz jar Skin Cream with Vitamin E
Medium size jar of Vaseline.
Mix together in a ziplock bag and knead. Cut corner to squeeze lotion
into container.
You can pick up the 3 items at Family Dollar, General Dollar, or
Dollar Tree store for about $3.50. If lucky you may find some nice
container there too. I have made a double batch, but don't use a bag
for it....can get real messy. Better to use bowl & your mixer. Just
be sure to clean them well!

Mexican Omelettes

1 Cup Corn
2 Tablespoons chopped Green Chilies
1/2 cup chopped tomato
1/8 teaspoon Chili Powder
1/4 cup water
1 teaspoon butter
1/4 cup (2 oz.) cheddar cheese, grated
Sliced olives for garnish
Stir together corn, chilies, chili powder and tomatoes. Cover and cook until hot. Set aside. In small bowl, beat together eggs and water. For each omelet, pour 1/2 cup of the egg mixture into heated Teflon coated saucepan (add butter or spray the pan to make it more slippery so the omelet will slide out easily). As soon as the egg starts to set sprinkle on the cheese and the ingredients (corn mixture). Remember to lift the sides with a fork or spatula to keep the egg loose and distribute the eggs. Slide out of pan and fold in half on plate. Garnish with a little more cheese and the olives if desired.

Maiden Wakes Muffins

2 cups flour
2 Carrots, grated
1/2 cup raisins
1 green apple, peeled, cored, grated
1 cup sugar
1/2 cup almonds, sliced
2 tsp. baking soda
3 eggs
2 tsp. cinnamon
2/3 cup vegetable oil
1/2 tsp. salt
2tsp.vanilla
Soak raisins in hot water, in a covered bowl, for 30 minutes. Drain thoroughly. Preheat oven to 350 degrees. In a large non-metal bowl, mix flour, soda, cinnamon, and salt. Stir in carrots, raisins, apple, and almonds. In a separate bowl, beat eggs, oil, and vanilla until well blended. Stir egg mixture in to the flour mixture until just wet. Grease muffin pan with a little butter or use cupcake/muffin cups. Divide the batter into the cups and bake for 20-22 minutes, or until golden brown. Cool for 5 minutes before removing from pan.
Makes 8 servings.

FRIED CABBAGE
Prep. Time: 5 minutes
Cook Time: 45 minutes
Ready In: 50 minutes
INGREDIENTS: 2 tsp's. butter
1 (15 oz.) can chicken broth
1 head cabbage cored and coarsely chopped
1 pinch salt and pepper or to taste
DIRECTIONS: 1. Bring the butter and chicken broth to a boil in a large skillet. Reduce heat to LOW and add the cabbage. Cover and cook over LOW heat to steam the cabbage for about 45 minutes stirring freqwuently or until cabbage is tender and sweet. Season with salt and pepper and serve.
YIELDS: 6 servings.
