CHOLESTEROL LOWERING DRINK

QUAKER MULTIGRAIN CEREAL

"For Roberta, who wanted to make the Homemade Energy Bars: You should be able to substitute uncooked Oatmeal for a slightly different taste without altering the outcome of the finished product. Q. Multi-Grain "combines four great tastes from four golden grains. Rye, barley, Wheat and of course, Quaker Oats, are perfectly blended to create a 'Multi-Delicious' hot cereal." Hope this helps."

JELLO POPCORN BALLS

1 c. light corn syrup
1/2 c. sugar
1 pkg. (3 oz.) Jello gelatin (any flavor)
1/2 lb. salted peanuts, coarsely chopped
9 c. popped popcorn

Bring syrup and sugar to a boil. Remove from heat and add Jello, stirring until dissolved. Add peanuts. Pour over popcorn. Mix well. Quickly form into 1 1/2 inch balls. Makes 4 dozen.

CHOCOLATE ZUCCHINI CAKE

Hi! For the reader looking for the Chocolate Zucchini Cake recipe, this has always been a favorite of mine.

Preheat oven to 350 degrees. Grease and flour bundt pan.

Mix and set aside:
2 1/2 cups flour
1/2 cup cocoa
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon

Blend together in a separate, larger bowl:
3/4 cup butter or margarine, softened
2 cups sugar
3 eggs
2 teaspoons vanilla

Add:
2 cups grated zucchini

Add to this, alternately:
Flour mixture
1/2 cup milk
1 cup chopped nuts (optional)

Pour into prepared pan and bake approximately 60 minutes.

When cooled, sprinkle with powdered sugar or drizzle with glaze:
2 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla

COUNTRY PEAR-ALMOND TART
Prep. Time: 20 minutes
Baking Time: 18 to 20 minutes

INGREDEINTS: 1 sheet ( 1/2 pkg ) frozen puff pastry thawed
1/4 cup sliced or slivered almonds
2 tbsp's. sugar
2 firm ripe pears, such as Bosc or Bartlett, cored and thinly sliced

DIRECTIONS: 1. Preheat the oven to 400° F. On a lightly floured surface, roll out the puff pastry into a 12-inch square. Using a cake pan or a plate as a guide, cut the pastry into a 10-inch round. Transfer it to an ungreased baking sheet. With a fork, prick the pastry surface all over except for a 3/4-inch border. 2. In a food processor or blender, finely grind the almonds with the sugar. Sprinkle two-thirds of the almond mixture over the pastry. Starting just inside the border, arrange the longer pear slices in overlapping concentric circles. Use the shorter pieces in the center. Sprinkle the remaining almond mixture over the pears. 3. Bake the tart for 18 to 20 minutes until the fruit is tender and the pastry is puffed and golden brown. Let the tart cool for 5 minutes then serve warm. SERVES: 6 (makes one 10-inch tart)

Spicy Baked Trout

Bake the fish with only a small amount of oil, and enjoy a heart-healthy Tex-Mex meal.

2 pounds trout fillet, cut into 6 pieces (any kind of fish can be used)
3 tablespoons lime juice (about 2 limes)
1 medium tomato, chopped
1/2 medium onion, chopped
3 tablespoons cilantro, chopped
1/2 teaspoon olive oil
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon red pepper flakes (optional)

Preheat oven to 350ºF.
Rinse fish and pat dry. Place in baking dish.
In a separate dish, mix remaining ingredients together and pour over fish. Bake for 15 to 20 minutes or until fork-tender.

Yield: 6 servings--Serving size: 1 piece

Each serving provides: Calories: 230; Total fat: 9 g; Saturated fat: 2 g; Cholesterol: 58 mg; Sodium: 162 mg; Calcium: 60 mg; Iron: 1 mg

Beananza Bars
32 to 36 bars
Preparation Time: 10 to 15 minutes
Baking Time: 20 to 25 minutes

1/2 cup all-purpose flour
2/3 cup packed light brown sugar
2/3 cup quick-cooking oats
1 cup natural wheat and barley cereal (Grape Nuts)
1 can (15 ounces each) Pinto or Great Northern beans or 1 1/2 cups cooked dry-packaged Pinto or Great Northern beans, rinsed, well drained, coarsely chopped
3/4 cup dark raisins
3/4 cup chopped dates
1 cup flaked coconut
1/2 cup chopped walnuts or almonds
7 tablespoons melted margarine
1/2 cup honey
1 teaspoon vanilla
1 teaspoon ground cinnamon
1/8 teaspoon salt

Combine flour, brown sugar, oats, cereal, beans, raisins, dates, coconut, and walnuts in large bowl. Add remaining ingredients, mixing well. Press mixture evenly into greased 13x9-inch baking pan. Bake at 350º F. until bars are browned and firm to touch in center, 20 to 25 minutes. Cool completely before cutting.
