Help During Chemo Treatment

"My brother in law has pancreatic cancer. He has chemo once a week. They are holding the tumor to its original size and they are happy with that. However, his shoulder and calves ache and he is completey exhausted. Has anyone got any suggestions for the pain or for the lack of energy? Anyone have any cancer experience and know some tricks to make life a little easier? thanks for your help."

ENGLAND - TIPS

"For the lady who recently moved to London: I found the food there very plain, but they have lots of familiar fast foods there with some of the same or similar menus. McDonald's comes to mind. Also, try the full English breakfast at local restaurants. There's no way to lose weight with that! They also have many Indian restaurants and Chinese places. The fish and chips tend to taste like the paper they're wrapped in, so use lots of the malt vinegar! But the ice cream that I ate there was great! If nothing else, there's always Hard Rock Cafe! (It's near Buckingham Palace) Enjoy your stay! "

CLEANING A SHOWER STALL

"I mist my shower frequently with straight white vinegar. It is great for removing lime deposits and other crud. It also kills bacteria. You might try putting a spray bottle of vinegar in the shower and mist right after you shower."

BAKING WITH SPLENDA SUGGESTIONS
Allison suggests:
"This is for Doris who asked about baking w/ splenda:

unfortunately it is difficult to achieve desirable results with using splenda alone. the texture is so much finer than regular sugar, that your cake will not rise much. without the complete recipe, i can't help too much; but here are a couple of things you can try.

1. use 2 c. splenda, substitute 1 c. dry milk powder for other cup sugar, and double the leaving agent (probably baking powder). 2. you could substite 3/4 of the sugar (2 1/4 c.) with splenda and use 3/4 c. regular sugar, and add a little extra leavener

your friend is very lucky to have a friend like you who is willing to go to so much trouble to help her stay healthy!

CHINESE MARBLE COOKIES

INGREDIENTS: 1 marble cake mix
1/2 cup cooking oil
Water
1 egg
1 cup chocolate chips

DIRECTIONS: Preheat oven to 350° F. Blend cake mix, oil, 3 tbsp's. water and egg. Stir in chocolate chips. Place a quarter of the dough in a small bowl. Stir in 1 tbsp. water and contents of small package. Spoon dark dough over light dough and marble. Drop onto ungreased cookie sheet. Bake 10-12 minutes. Cool 1 minute and remove.

MAKES: 3 dozen cookies

Healthy Blueberry Mini Loaves

3 1/2 c unbleached flour
1 c sweetened applesauce
2 c frozen blueberries
2 whole eggs
1 c granulated sugar
1/4 c egg whites
4 tsps baking powder
4 tbsps olive oil
2 tsps lemon peel, grated
1/2 c fat-free milk
1 tsp salt

Preheat oven to 375. Prepare 16 mini loaf pans with cooking spray and flour; set aside. In a mixing bowl, combine flour, blueberries, sugar, baking powder, lemon peel, and salt; set aside. In another mixing bowl, combine applesauce, eggs, egg whites, oil, and milk. Fold into flour mixture, stirring until moistened. Spoon each loaf pan with three ounces batter or about half cup of batter. Bake for 20 minutes, or until tops are browned.

HONEY CUSTARD FRENCH TOAST

1/2 cup honey
1 cup milk
6 eggs
1-1/2 teaspoons cinnamon
1/8 teaspoon salt
12 slices (3/4-inch thick) French bread
Butter
Honey and toasted pecan pieces

Directions

In large bowl, beat together honey, milk, eggs, cinnamon and salt. Dip bread slices in egg mixture, turning to coat. Brown soaked slices in butter over medium heat, turning once. Serve with honey and sprinkle with pecans, if desired.

GREEK BAKED FISH

2 lbs fresh black grouper fillet, cut into approximately 1 1/2 inch pieces (or other fillet of your choice)
2 (16 ounce) cans crushed tomatoes, juices drained
1 large onion, coarsely chopped
1 cup kalamata olives, pitted and halved
1/2 cup fresh parsley, minced
1 1/2 tablespoons small capers, drained
4 cloves garlic, minced
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
1 cup crumbled feta cheese
1/2 cup white wine
1/2-3/4 cup olive oil

Preheat oven to 375F.

Place the fish pieces in a metal baking pan.

Season lightly with salt.

Combine all the remaining ingredients, except the wine and olive oil, season, and distribute on top of fish.

Pour the wine and olive oil over and bake for about 35-40 minutes, or until the fish flakes.
