Salad Dressing Recipes

Basic Buttermilk Salad Dressing

1/2 c lowfat buttermilk
1 T white wine vinegar
1/2 t sugar
2 t dijon mustard
salt and pepper to taste
3 green onions, thinly sliced
1 garlic clove, minced

Mix all together and store in the fridge.


Benihana Salad Dressing

1/4 c Onion; chopped
1/4 c Peanut oil
2 tb Rice wine vinegar
2 tb Water
1 tb Fresh ginger root; chopped
1 tb Celery; chopped
1 tb Soy sauce
1 1/2 ts Tomato paste
1 1/2 ts Sugar
1 ts Lemon juice
dash Salt
dash Pepper

Combine all ingredients in blender and process until almost smooth. Makes 6 servings; about 2 tbs + 2 tsp each. Unused portions may be stored in a covered container in the refrigerator. Source: Benihana Restaurants


Bleu Cheese Dressing

4 oz Wedge of Bleu cheese,crumbled
2 c Sour cream
6 drops Tabasco sauce
1 ts Worcestershire sauce
1 ts Lemon juice
Salt to taste
Pepper to taste

Crumble Bleu cheese. Add sour cream and mix well. Add remaining ingredients. Mix well. This is quite thick but it may be thinned with a tablespon of Half and Half or cream. After it is mixed for a while it will thin out a bit.


Cranberry Vinaigrette

1/2 c Jellied cranberry sauce
1/4 c Raspberry or red wine vinegar
1/4 c Oil
1 tb Dijon mustard

Combine all ingredients in blender container; blend until smooth. Pour into serving container. Refrigerate until ready to serve.


Fat Free Balsamic Dressing

3/4 c Water
1/4 c Balsamic vinegar
3 ts Capers
2 ts Dijon mustard
1 1/2 ts Dried basil
1 tb Fresh parsley, chopped

Combine the ingredients. Adjust vinegar to taste, since it has a stong flavor. Store in a covered container in the refrigerator. Makes 1 cup Calories: 2 (2 Tablespoons) Fat: 0 gm, 0% fat
