Mock Apple Pie Recipes (using Ritz Crackers)

Grandma's Mock Apple Pie

1 1/2 cup sugar
1 1/2 cup water
1 1/2 teaspoons cream of tarter
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Boil above 5 minutes
Cool Add 1 teaspoon lemon juice
Break 12 soda crackers in 4 pieces each. Put in pie crust. Pour over liquid. Put on top.

Now, Grandma just supposed that one would know what temperature to bake this pie as that was the end of the recipe! So someone else will have to tell us that! Come to think of it---she cooked on a wood stove...so probably just stuck her hand in the oven and 'tested' the temperature to see if it felt right!


Mock Apple Pie

1 stack pack RITZ CRACKERS
2 Cups water
2 Cups sugar
2 Tsp. cream of tartar
2 Tbsp. lemon juice
grated rind of one lemon
butter
cinnamon

DIRECTIIONS: Roll out bottom crust and fit into pie pan. Break Ritz cracker coarsely into pastry-lined plate. Combine water, sugar and cream of tartar in sauce pan. Boil gently for 15 minutes. Add lemon juice and rind. Cool. Pour syrup over crackers. Dot generously with butter and sprinkle with cinnamon. Cover with top crust. Trim and flute edges together. Cut slits in top crust to let steam escape. Bake in a hot oven (425 degrees F.) for 30-35 minutes minimum, until crust is crisp and golden. Serve warm.

MAKESL: 6 - 8 servings.


Fooling Pie

24 Ritz Crackers
1 1/4 Cups of sugar
2 Cups boiling water
2 tsp cream of tartar
Butter and Cinnamon

Make a pie shell, combine sugar, cream of tartar and water boil 3 minutes Add crackers and boil 2 minutes longer Pour into pie shell, dot with butter and cinnamon cover with top crust. Bake 425 25-30 minutes this really tastes like apple pie..


Ritz Mock Apple Pie

Prep: 10 min Total 45 Min

Filling:
2 cups water
3/4 cup sugar
2 tsp cream of tartar
30 Ritz Crackers
1 unbaked 9 in pie shell
1 Tbsp lemon juice
1 tsp cinnamon

topping:
1 cup finely crushed Ritz Cracker crumbs, about 25 whole crackers
1/2 cup lightly packed brown sugar
1/2 tsp cinnamon
1/3 cup melted butter or margarine

Combine: water, sugar and cream of tartar; bring to a boil
Drop : in whole crackers and simmer for 5 min
Pour: mixture into pie shell, sprinkle with lemon juice and cinnamon
Combine all ingredients for topping and sprinkle over pie
Bake at 400º F for 15 min, then reduce heat to 350º F and continue baking 15-20 min. longer. Serve Warm.

Makes 8 servings.
